Better for you pancakes

After much trial-and-error, I think this is the best pancake recipe on the planet outside of Uncle Bill's Pancake House in Avalon, NJ. I’ve long held this as a secret recipe, but it’s time to share it with the world. Combining the dry ingredients in bulk makes for am easy DIY healthy pancake mix, too!

Ingredients

1 1/2 cups Bob's Red Mill gluten-free all-purpose baking flour

1 heaping tablespoon Lakanto monkfruit sweetener

1 1/2 cups unsweetened vanilla almond milk

1 egg

1 heaping tablespoon baking powder

1 teaspoon salt

Kerrygold butter

Blueberries

Method

Scramble one egg into a large mixing bowl. Add all dry ingredients, then 1 cup almond milk. Mix, adding additional almond milk until smooth.

Heat a pan over medium heat, then a little dab of butter. Drop pancake batter a half cup at a time. Add blueberries, and push them down into the batter. When bubbles start to form, flip and cook until done.

Serve with maple chicken sausage and over-easy eggs.
